Global Bites: North Africa

I love good food and look forward to a yummy meal and glass of wine at the end of the day. Last week, in an attempt to break away from my usual lamb marinade (delicious, but I was in a rut!), I searched online and stumbled across this gem. The flavors are so good that I made it 4 times in one week (!!!) - 2x on lamb, 2x on chicken. Don't let the list of ingredients turn you off. All you need to do is throw them in a food processor and then marinate the meat. Easy peasy.  Try it & tell me what you think!

Pro tip: Buy your spices at the your local asian or middle eastern market. They have everything you could possibly need & their prices are great.



1/2 large onion, cut into 2-inch pieces

6 garlic cloves, peeled

2 tablespoons fresh mint leaves

2 tablespoons paprika

1 tablespoon salt

1 tablespoon fresh marjoram leaves (oregano)

2 teaspoons ground black pepper

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons hot pepper sauce (sub: red pepper flakes)

1 teaspoon turmeric

1/2 teaspoon ground ginger (use fresh ginger if possible)

1/4 teaspoon ground cinnamon

1/2 cup olive oil

1/3 cup fresh lemon juice

Lamb, chicken, whatever meat sounds good!


Combine all ingredients except olive oil and lemon juice in food processor. Pulse on/off until coarse paste forms. Add oil and lemon juice and process until well blended. Place the meat in large resealable plastic bag. Pour spice mixture over the meat & seal bag. Turn bag several times and rub spice mixture into meat.

I made this one morning and let the lamb marinate all day and it was fantastic. I also put it on chicken for 10 minutes before cooking and it was really good. I grilled the lamb and baked the chicken - both were delicious!
